En esta entrevista, exploramos las tendencias que definen su presente y el compromiso que impulsa su futuro.<\/p>\n<p>Para Jos\u00e9 el Bierzo tiene una nueva geograf\u00eda del vino, &#8220;Una de las transformaciones m\u00e1s relevantes en la viticultura actual del Bierzo viene de la mano de las clasificaciones de origen, que buscan resaltar la calidad y el car\u00e1cter \u00fanico de cada vi\u00f1edo,&#8221; explica. &#8220;Nosotros tenemos cinco terru\u00f1os especificas y esta jerarqu\u00eda no solo define los vinos de m\u00e1xima calidad, sino que adem\u00e1s gu\u00eda las preferencias del consumidor y marca un nuevo est\u00e1ndar en la regi\u00f3n.&#8221;<\/p>\n<p>Para la familia de Jos\u00e9 Bodegas Gancedo es un legado familiar que se ha transformado en vocaci\u00f3n.\u00a0El equipo de Bodegas Gancedo no lleg\u00f3 al vino por casualidad. Su origen est\u00e1 en el coraz\u00f3n de las vi\u00f1as familiares:\u00a0\u201cEn El Bierzo hemos crecido viendo las vi\u00f1as de nuestros abuelos y padres,&#8221; nos dice. &#8220;La cultura del vino se transmite de generaci\u00f3n en generaci\u00f3n. Desde 2003, nuestra bodega sigue ese camino: proteger un patrimonio heredado. El amor por nuestras costumbres y por el vino nos convirti\u00f3 en lo que hoy somos.\u201d<\/p>\n<p><strong>Restauraci\u00f3n y vino: una alianza vital<\/strong><\/p>\n<p>La pasi\u00f3n por la gastronom\u00eda va mucho m\u00e1s all\u00e1 de una afinidad por la buena mesa dice Jos\u00e9. En sus palabras, \u201cLa enolog\u00eda y la gastronom\u00eda est\u00e1n ligadas de forma inexorable. Los restauradores \u2014sin importar el tipo de negocio o territorio\u2014 son los principales promotores del vino. Nos apasiona su forma de orientar al cliente, de crear experiencias. Es una figura imprescindible. Su prescripci\u00f3n tiene un valor incalculable: gracias a su discurso y servicio, el cliente vive la m\u00e1xima experiencia. Hay curiosidad, exigencia y apertura:\u00a0\u201cEl paladar del consumidor ha evolucionado,&#8221; a\u00f1ade Jos\u00e9. &#8220;Se conoce m\u00e1s, se selecciona mejor, y el deseo de descubrir nuevas variedades crece d\u00eda a d\u00eda.
